The only one I could really see myself putting serious time into creation is LittleBigPlanet, as I've always loved physics based games and puzzles. But I do think it's great that we're finally seeing user created content on consoles - I still remember Microsoft banging on about how it would be part of the next-gen even before the 360 came out, and so far there's been virtually nowt.
